Machica, a Superfood

Ecuador is a country full of nutritious foods and today´s feature is no exception. In the Andean region, its inhabitants enjoy a flour based on barley that is full of benefits, the famous machica.
Actually, it is one of the healthiest barley derivatives, it is obtained by grinding roasted cereal grains and is distinguished from corn, morocho and wheat flour by their flavor, hue and texture.
It is consumed raw, roasted or boiled, in soups such as club locro, and el chapo. In fact, the people of Latacunga used to consume the latter, el chapo, at every meal of the day; Be it morning, afternoon or evening. What does it consist of? Well, basically it's mixing the flour with water, coffee or milk and sweeten with honey or brown sugar.
Besides being delicious the health benefits are many as it´s full of vitamins, calcium, potassium, fiber, iron, magnesium and iodine. All these healing properties allow us to keep our body healthy while consuming a very delicious cereal.
