Today we propose an alternative side dish to the traditional potatoes, mashed potatoes or rice and another way to incorporate more vegetables into our diet.
It is cauliflower rice.
The preparations are rather simple, all you need is cauliflower and a cheese grater. Using the larger holes of the grater you grate the cauliflower similar to the size of a rice kernel.
Once grated, heat in a pan with a tablespoon of olive oil or other vegetable oil, and sauté the "rice" cauliflower for about 3-4 minutes, season to taste with salt and pepper you can also add curry and spices for additional flavor.
This simple and quick recipe can be used to accompany meat, fish or other vegetables.
