The patarasca is a typical dish of the Amazon, not only from Colombia but also from Peru. We share a recipe that has been adapted for home preparation. You can accompany it with arepas or rice.
Fish (whole or fillets) 6
Chopped Onions 2
Chopped tomato 1
Ground garlic cloves 5
½ tablespoon small pepper
Cumin 1 small scoop
Salt to taste
In a bowl mix oil, garlic, cumin, salt, pepper, onion, and tomato.
Once the fish is clean, fill it with the mixture and if it is fillet place it on top.
Wrap everything in the bijao sheet and cook on the grill for 15 minutes.
When it is ready, it is removed and you can enjoy it with fresh-squeezed lemon.
