Kiwi Cheesecake

Everyone knows that kiwi has many health benefits, today we share the recipe of Claudia Zúñiga (My sweetest touch) as we combine all the benefits for a delicious dessert. Remember that when you prepare it you will need fresh fruit and in this way, you can benefit from all the properties of kiwi. Let us begin!

Crushed cookies (sweet) 150 grams
Cinnamon powder 1 small scoop
50 grams melted butter
Cream cheese spread 350 grams
100 grams impalpable sugar
10 grams unsweetened jelly
100 milliliters milk cream
Crushed Kiwis 90 grams
Lemon Jelly 75 grams
Hot water 250 milliliters
Sliced Kiwis 2

Mix the crushed cookies, cinnamon and butter in a bowl. We put the mixture in a mold of 20 cm in diameter. It will be the base of our cheesecake so we have to press well and refrigerate for 15 minutes.
Beat the cream cheese spread with the impalpable sugar very well.
Meanwhile, in a small bowl add the unflavored gelatin with a little water and let it stand for five minutes and then heat it for 15 seconds in the microwave.
We add cream of milk, the crushed kiwi dough, the unflavored gelatin to our spread of cheese spread and impalpable sugar. We continue beating for a few minutes until creating a homogeneous mass. We recommend that you use an electric mixer.
We take our cookie mold from the refrigerator and spread our cheese dough in the mold to form our cheesecake. Refrigerate for at least 3 hours until firm.
Then, in another deep bowl,​ we add the lemon jelly next to the hot water and wait for it to cool. In this step,​ you could add a drop of green food coloring to give it that kiwi color.
Decorate the top of the cheesecake with the slices of kiwi, pour the lemon jelly and refrigerate again until it is firm.
