Fresh, different and super natural, this simple salad is a great complement for summer.
1 red onion, thinly sliced
2 cucumbers cut into thin slices
Juice of 2-3 medium lemons
2 tablespoons chopped cilantro
2 tablespoons of olive oil
Salt to taste
We put the slices of onion in a dish and sprinkle with half a spoonful of salt.
Rub the onions with the salt and then cover them with water for a few minutes. Then rinse the onions to remove the bitter taste.
Mix the cucumber slices, the washed onion, the lemon juice, the chopped cilantro and the olive oil.
The salad can be served immediately or it can be left to rest for at least 30 minutes before serving and seasoned with salt to taste. We can also add variants such as avocado and sesame seeds.
