Delicious recipe of a cold cream of zucchini and avocado.
- 2 zucchini
- 2 ripe avocados
- 2 natural yogurts without sugar or greek
- Half a liter of vegetable broth
- 1 leek or chives
- Olive oil
- Salt and pepper
Sauté the zucchini and leeks or chives finely chopped in the pan with olive oil, until it is well cooked. Add the broth and let cook for two minutes.
We add the peeled avocados in tacos, so that they dissolve in the broth. Then add the yogurt, season and beat the mixture.
If we like less thick, you can add more broth.
Let stand in the fridge for an hour, and it´s ready to taste.
