Tortellini with vegetables and almonds

An exquisite pasta dish that never goes out of style. In addition to combining tortellini with peppers and almonds, you can also use carrots, mushrooms or cherry tomatoes.


For 4 people:

- 300 grams of tortellini

- 12 almonds

- 1/2 red pepper

- 1/2 green pepper

- 1 small glass of white wine

- 1 onion

- 1 tablespoon of sweet paprika

- 3 garlic cloves

- 6 tablespoons fried tomato

- Oil

- Salt

- Parsley


- First, in a bowl with a little oil, put the peppers, onion and garlic previously chopped. Afterwards introduce the bowl in the microwave, connected to 100% power for 10 minutes.

- Then season it with salt and add the wine, the fried tomato, the paprika and the peeled and chopped almonds. We put the bowl back in the microwave and cook it all, this time for about five minutes. Afterwards, we remove it and reserve.

- In a bowl, put a liter of water to boil with salt and put the tortellini. Once the pasta is cooked, mix it with the prepared sauce and serve the dish with a little sprinkled parsley.
